The content of this yummy chronical is fully validated/approved by a french lady, long term friend of this skinny genious cook. Having lived now for 15 years in Québec allows me to say what follows: pancakes are good, but crêpes are divine.
For those addicted to salt, another suggestion: spinach and feta cheese, a little cream also may be ?
For a sweet tooth, a real treat named "Mont Blanc": (your pancreas will hate you the following hour). Chesnut spread (crème de marrons) and wiped cream (chantilly). But please, no substitutes. Sin is so enjoyable...

“Jam! - The best! Make a line of jam right down the center. I thought this was very close to Swedish pancakes
with Lingonberries (my favorite all time food, but no one
ever makes it. Now I can!)"

(Ancient secret for your eyes only, Grasshopper: The worlds best crepe topping - is a mixture of cream-cheese,
icing sugar and lingonberries)

And…could you forward a message to Olivier for us? If
he ever decides to leave Cirque, he is welcome to come
live with us, free, forever (we'll even put him in the
will)if he cooks.
